Habilita\u00e7\u00e3o concedida pelo Minist\u00e9rio da Agricultura e Pecu\u00e1ria (Mapa) e inspecionada pela Ag\u00eancia Goiana de Defesa Agropecu\u00e1ria (Agrodefesa), o reconhecimento de um produto artesanal pelo Selo Arte vai al\u00e9m das garantias de qualidade, originalidade e regionalidade daquela receita, como tamb\u00e9m abre as portas para sua comercializa\u00e7\u00e3o em todo o territ\u00f3rio nacional.<\/p>\n\n\n\n<p>Hoje, est\u00e3o devidamente homologadas na Agrodefesa, e acompanhadas periodicamente, cerca de 12 queijarias artesanais goianas, dedicadas a produzir receitas originais de forma artesanal de queijos que est\u00e3o ganhando os paladares mais exigentes pelo pa\u00eds afora. Conhe\u00e7a a seguir um pouco da hist\u00f3ria de algumas dessas queijarias que t\u00eam contribu\u00eddo com boas pr\u00e1ticas agropecu\u00e1rias e de fabrica\u00e7\u00e3o artesanal; e al\u00e7ado o nome de Goi\u00e1s a patamares mais elevados quando o assunto \u00e9 queijo.<\/p>\n\n\n\n<p><strong>Conhe\u00e7a a seguir a trajet\u00f3ria da Queijaria Helou<\/strong><\/p>\n\n\n\n<p>De descend\u00eancia s\u00edria, a fam\u00edlia de Eduardo Helou optou por fazer da fabrica\u00e7\u00e3o de queijo artesanal um estilo de vida. Formado em Rela\u00e7\u00f5es Internacionais, com carreira por Bras\u00edlia e Goi\u00e2nia, Eduardo se mudou com a fam\u00edlia n\u00e3o s\u00f3 de endere\u00e7o para se dedicar a uma vida mais pr\u00f3ximo da natureza; eles escolheram adotar a profiss\u00e3o de queijeiros como oficial, em uma propriedade rural em Itau\u00e7u (GO).<\/p>\n\n\n\n<p>O queijo escolhido para a produ\u00e7\u00e3o da queijaria Helou remonta a hist\u00f3ria de seus antepassados: o ariche. A receita de fam\u00edlia, que era feita para ser compartilhada como forma de exaltar a gastronomia do pa\u00eds de origem de seus antepassados, ganhou novos contornos pelas m\u00e3os do queijeiro artesanal, que hoje faz tr\u00eas vers\u00f5es de ariche: natural, com adi\u00e7\u00e3o de zatar e com adi\u00e7\u00e3o de zatar e pimenta.<br><\/p>\n\n\n\n<figure class=\"wp-block-gallery de boas pr\u00e1ticas agropecu\u00e1rias e que realiza os testes de qualidade que s\u00e3o exigidos. \u201cNo entanto, com o apoio e orienta\u00e7\u00e3o da Agrodefesa, eu montei o meu pr\u00f3prio laborat\u00f3rio na queijaria, onde fa\u00e7o o teste a cada nova remessa de leite que recebo, antes de iniciar a produ\u00e7\u00e3o\u201d, explica.<br><\/p>\n\n\n\n<figure class=\"wp-block-gallery \/><\/figure>\n<\/figure>\n\n\n\n<p><br>Com aux\u00edlio dos conhecimentos do pai, que \u00e9 engenheiro, e os pareceres t\u00e9cnicos da Agrodefesa, Eduardo construiu a Queijaria Helou dentro dos padr\u00f5es exigidos pelas normas t\u00e9cnicas, e hoje possui espa\u00e7o para ampliar sua produ\u00e7\u00e3o. \u201cTenho muito interesse em fazer a coalhada s\u00edria\u201d, adianta.<\/p>\n\n\n\n<p>Semanalmente, a queijaria processa 600 litros de leite que resultam em m\u00e9dia em 500 pe\u00e7as de ariche, de 150 gramas cada. Apesar de contar apenas com seis meses de opera\u00e7\u00e3o, o queijo \u00e1rabe produzido em Itau\u00e7u j\u00e1 chegou a S\u00e3o Paulo, Minas Gerais e \u00e0 capital goiana, onde tem uma clientela
